Happy Rosh hashanah!

Still not totally recovered from a long and tiring week of colds, skin infections and antibiotics so my mom is making tomorrows desert; a mocha tort with a walnut filling. I believe she's using an epicurious recipe... but knowing my mom and myself she is probably switching around some things! I'll tell you how it tastes and what we changed (if we did)! Anyways for anyone who is Jewish: Happy New Year.

I hope I feel better next week. If I am I will be making homemade mini pop-tarts with puff pastry dough and home-made filling and glaze. The 8th graders in my art studio (open to all years above 11) asked me too. I'll be making them on monday night.

My Mom's Walnut Cake with Mocha Icing.

Doesn't look the prettiest she's ever made, but boy was it good! THANKS MOM! She did say she changed of few things, but she can't remember. We work by taste, a little bit of this and a little bit of that.

DAY #2: The Early Morning Baker

Pumpkin Chip Cookies recipe from Joy the Baker!

Sorry for not uploading... the day of... got sidetracked.

So anyways. I tried Joy's pumpkin chip recipe! It was awesome! Everyone in my school loved them.

http://www.joythebaker.com/blog/2008/04/super-soft-pumpkin-chocolate-chip-cookies/

I got up at 5:30 in the morning to have them fresh for school and the first day of fall. Funny thing is my mom's repainting her room so she's sleeping in the dinning room and she left all the doors open; so when I had to mix the sugar and eggs together with the electric mixer I had to do it in my bedroom. ahaha! The only thing I changed was the size of the cookies. She called for a 1/4 cup scoop which in generally is huge and even though I made the a small spoon scoop they expanded... so they were big. Made about 30 medium cookies. Not bad, not bad. Final taste: like muffiny type cookies. Excellent.

Haven't been feeling well lately: getting over a cold and I got an infection in my leg which should hopefully get better ... I hope it does. So when all the ailments go away I'll be making dinners again! Next baking project for school is coming: HALLOWEEN. Be tune for my spooky VAMPIRE CUPCAKES!

DAY #1: the sick day diet

The sick day diet is when you eat nothing you personally make. I happen to start taking pictures at lunch but I did have my mom's version of a nectarine, plum and apple crumble for breakfast along with a banana (recipe below)

Another one of my mothers creations is yesterday's meatloaf :D

And best comes these awesome guys:

Whoever dissed "frozen" or pre-made food count them wrong. Pillsbury crescents are AWESOME with a heaping spoon of Nutella! Feels so nice on a sore throat and is tasty to even the most stuffed up noses in the world. For those who don't know what Nutella is, it's a chocolate and hazelnut spread. It's delicious.

For dinner was a delicious homemade pizza (except for the bread). If you want to replicate this delicious meal:

1 Boboli Pizza bread (you can buy the whole wheat but it's not as good)
Fresh Mozzarella cut into slices
Large beefsteak tomato
A few sun-dried cherry tomatoes (with the oil)
And anything else you want from chilies t0 the herbs (rosemary, crushed chili peppers ect)

Instructions: pre-heat oven to 450 degrees Fahrenheit.

Place everything on top of the bread excluding the tomato sauce (can be either homemade or packaged). The sauce goes on last before being put into the oven otherwise it makes the pizza bread soggy.

Mom's Nectarine, Plum and Apple Crumble Recipe:

Ingredients:

1 nectarine
1 plum
2 small apples (cut apples slightly small as they take longer to cook)
2 tablespoons of heavy cream
1 tablespoon of vanilla
2 cups of oatmeal
1 cup of brown sugar (or to taste if the fruits are sour)
3 tablespoons of butter- room temperature
1/2 cup of almonds

Pre-heat the oven to 375 degree Fahrenheit and greece a 7x2x5 pan (preferably oven proof glass)

While the oven is pre-heating take you fruit and chop them into a little small cubes (a little less then an inch) try to keep all the fruit evenly chopped otherwise they won't bake at the same rate. If that happens you'll have either- undercooked fruit or burnt crumble.

Place the fruit in a bowl, mixed in vanilla, heavy cream and granulated sugar (optional if fruit are too tart/sour) Let that be and move to the next step.

Put oatmeal, brown sugar, butter and almonds into the blender and pulse until you have thick but chunky mixture (if you need more double the recipe)

Then place fruit into pan with all the juices and thickly spread crumble on top.

Place into the oven for 30-45 minutes. The fruit will be cooked when juice begins to bubble up past the crumble.

First Mission: 30 days of Food!

Let's GET STARTED!

I've always wanted to blog my expeditions in the kitchen, so this is me finally doing so. So far my times in the kitchen have been proved to be successfully. YAY! I will be trying out recipes as well as making my own! Let's see how this first mission goes!
